I have discovered the most amazing recipe for making your favorite bagels into low-carb treats!!

As someone who follows a mostly keto-friendly lifestyle, my friends always ask me if it’s challenging to cut out carbs like bread and sugar. In truth… sometimes it is!

I have never really had a big sweet tooth, so avoiding sugar isn’t too much of a challenge for me personally. But when it comes to avoiding breads and pastas, the struggle can be tough at times. That’s why I’m always looking for new ways to reinvent and reimagine great recipes so I can enjoy more of the foods I love.

Ingredients

2 cups almond flour
1 tbsp. baking powder
1 tbsp. MCT 143 Oil
3 cups shredded mozzarella cheese
2 oz. cream cheese
2 large eggs, plus 1 large egg lightly beaten
3 tbsp. Everything But The Bagel seasoning

Instructions

  1. Preheat oven to 400°. Then take two baking sheets and line them with parchment paper.
  2. In a large bowl, whisk together the dry ingredients. Then in a separate bowl, fold together the mozzarella cheese and cream cheese, and then microwave the mixture for about 2 minutes. I recommend pausing every 30 seconds to stir the ingredients so they don’t bubble up. You just want them to combine evenly.
  3. Next, scrape the cheese mixture into the large bowl with the dry ingredients. Add in the two eggs, and make sure it’s all combined.
  4. Divide the dough into 8 equal-sized balls. Then press your finger into the center of each ball and stretch it into a bagel shape. Place each bagel on your prepped baking sheets.
  5. Brush each one with a little bit of egg wash and sprinkle on some delicious seasoning. *Pro Tip: add some seasoning to the bottom of the pan, too. That way you have seasoning on both sides!
  6. Place the baking sheets on the middle rack of your oven for 20-24 minutes or until they look golden brown. Remove from the oven and let cool for about 10 minutes.
