Hey, friends! It’s October, and you know what that means? ‘Tis the season for everything pumpkin. 🎃

Whether you eat it, drink it (PSL), or decorate with it, it’s safe to say that pumpkins are always the hottest fall trend.

This week, the kiddos and I were in the mood for something sweet, so we decided to make a delicious KETO-friendly pumpkin pie! I didn’t really have a true recipe for this, so I wanted to test a few things to see how it would come out. And OMG, it turned out GREAT!

Here’s what you’ll need.

FOR THE CRUST
1 1/2 c. almond flour
3 tbsp. coconut flour
1/4 tsp. baking powder
1/4 tsp. kosher salt
4 tbsp. butter, melted
1 large egg, beaten
1 tsp MCT 143 oil

FOR THE FILLING
1 (15-oz.) can pumpkin puree
1 c. heavy cream
1/2 c. packed keto-friendly brown sugar, such as Swerve
3 large eggs, beaten
3 tbsp pumpkin pie spice
1 tbsp keto kreme, sweet KREME
1/4 tsp. kosher salt
1 tsp. pure vanilla extract
Whipped cream (for the top)

Instructions:

Once all the goods are secured, preheat the oven to 350 degrees. 

For the Crust:

Start by whisking together the almond flour, coconut flour, baking powder, MCT oil, and salt into a large bowl. 

Add in the melted butter and egg, and continue to stir until the dough forms. 

Once the dough has formed, press it evenly into a 9” pie plate, and use a fork to poke holes all over the crust. 

Bake the crust for approximately 10 minutes, until lightly golden.

For the Filling:

In a large bowl, whisk together pumpkin (duh), heavy whipping cream, keto KREME, brown sugar, eggs, spices, and vanilla until the consistency is smooth. 

Pour the pumpkin mixture into the par-baked crust. 

Final Steps:

Bake pie until the filling is slightly jiggly in the middle and the crust is golden brown. This should take approximately 45 to 50 minutes. 

Once slightly jiggly, turn off your oven and prop the door open. Let the pumpkin spice smells waft through your entire home for about an hour while the pie cools. 

After your pie has cooled, refrigerate it until it is ready to serve.
