This weekend while Dustin and I were with the kiddos in Beech Mountain, North Carolina, I decided to whip up a batch to have as a warm snack after a day on the slopes. It was the perfect sweet treat to go with my Keto Kreme—and the kids loved it!
Take a look at the ingredients and instructions below.
Ingredients:
- 1 medium overripe banana
- 2 large eggs
- 2 egg yolks
- 1/2 cup butter
- 1 tsp vanilla
- 3/4 cup almond flour
- 1/2 cup confectioners erythritol
- 1/4 tsp salt
- 1 tsp baking powder
- 1 packet banana cream protone
Instructions:
- Preheat oven to 350* F
- Grease a loaf pan
- In large bowl, mash the banana with a fork. Then add the melted butter, eggs, egg yolks and vanilla. Stir until well combined.
- In a separate bowl, combine the almond flour, protones, sweetener, salt and baking powder. Stir until mixed together.
- Gradually combine the dry and wet ingredients, stirring slowly.
- Transfer batter to loaf pan and bake 30-35 minutes.
- Let cool and enjoy!
