5 Quick & Healthy Kid-Approved Breakfasts

As a productive mom of five fun-loving kiddos, one of my most invaluable life hacks is meal planning as much as possible! Not only is it more convenient for me and my family’s schedule, but it is often healthier and more budget-friendly.

Here are some of my favorite, easy-to-make recipes that even the pickiest of kid eaters will enjoy.

Egg Bites

Ingredients: 

  • 12 eggs 
  • Ham, bacon, sausage, vegetables or cheese 
  • Muffin tins
  • Salt & pepper

Instructions:

  • Preheat oven to 350*F
  • Scramble eggs in a bowl. Add salt & pepper.
  • Grease muffin tins 
  • Add eggs to muffin tins, fill half way
  • Add toppings of choice 
  • Bake for 25 mins or until eggs are cooked

Make ahead breakfast burritos 

  • Low carb tortillas 
  • Ham, sausage, veggies, cheese, or beans 

Instructions

  • Cook scrambled eggs & put to the side to cool down 
  • Place scrambled eggs in middle of tortillas. Add toppings of choice then fold tortillas to form burritos.
  • Put into freezer bag or container with date made! I reheat the burritos from frozen.
  • Pop them in microwave for 1-2mins then put into fry pan for a few minutes to brown the tortilla 

Keto Zucchini Muffins

Ingredients:

  • 3/4 Cup grated zucchini 
  • 3 large eggs 
  • 1/2 Cup erythritol 
  • 2.5 cups Almond Flour 
  • 1 teaspoon cinnamon 
  • 2 teaspoons baking powder 
  • 1/4 teaspoon xanthan gum
  • 1/3 cup MCT 143 Oil 
  • 1/3 cup heavy whipping cream 
  • 1/3 cup sugar free chocolate chips (I love Lily’s chips) 

Instructions: 

  • Preheat oven to 350* F 
  • Line muffin tins
  • Remove ends of zucchini & grate into a bowl
  • Place the grated zucchini into paper towel & squeeze out extra zucchini water 
  • Measure zucchini (grated) to 3/4 cup and put to the side 
  • In a medium mixing bowl, whisk eggs & erythritol until fully combined 
  • In a large mixing bowl, add almond flour, cinnamon, xantham gum, & baking powder. Whisk to combine 
  • Put the beaten egg mixture into bowl with almond flour, add heavy whipping cream & MCT 143 Oil 
  • Combine until batter forms 
  • Stir in zucchini and chocolate chips
  • Fill 12 muffin tins with batter (half way so they don’t overflow when baking) 
  • Bake 20-25 mins or until fork comes out clean

Smoothie Bags:

Ingredients

  • 1 cup frozen or fresh fruit of choice
  • 1/2 cup spinach or kale 
  • 1/4 cup chia seeds

Instructions

  • Place all of this into a freezer bag. Mark with the date that I put it in the freezer
  • When ready for smoothie add it all into blender and add in 3/4-1 cup of liquid of your choice (I mix up a pack of NAT LITE and put that in) and blend until smooth
