Birthday Cupcake Recipe

Today the kiddos and I decided to bake KETO CUPCAKES! Yes, you heard that right.

These delicious 100% Keto-friendly treats are absolutely AMAZING!  Not only are they a healthy alternative to store-bought mixes, but the kiddos had a blast making them with Dustin and I in the kitchen.

These cupcakes are the perfect activity to make any afternoon a little more fun. Happy baking, ladies and gents! ๐Ÿง๐Ÿ’•

Lauren Birthday Cake Cupcake

For the cupcakes, here are all the ingredients you will need:
        โƒ       1.5 Cups Almond Flour
        โƒ       1/4 cup Keto pro birthday cake protein powder
        โƒ       1 TSP Xanthan Gum
        โƒ       1 TBSP Baking Powder
        โƒ       1/2 TSP sea salt
        โƒ       3/4 cup granular monk fruit erythritol
        โƒ       1/2 cup butter (melted)
        โƒ       4 eggs
        โƒ       1 TSP vanilla extract
        โƒ       1 cup unsweetened almond milk

Below are the ingredients for the icing:
        โƒ       1/2 cup powdered monk fruit erythritol
        โƒ       1/2 cup butter softened
        โƒ       4 oz cream cheese
        โƒ       2 TSP vanilla extract

Birthday Cupcake Recipe ingredients

Instructions:

Once you have all the ingredients, preheat the oven to 350 degrees. 

While the oven warms, whisk all the dry ingredients together, and set them aside. Whisking the dry ingredients is a perfect job for your young kiddos. While your little sous-chefs are mixing the dry ingredients, add all the wet ingredients to your stand mixer, and combine on high for 1-2 minutes. 

Change your stand mixer setting to stir and combine HALF the dry ingredients for about 30 seconds. Once the first half of the dry ingredients have been mixed in, add the remaining dry ingredients and stir for approximately 30 more seconds. 

After that, your cupcake mix should be complete! Just scoop your mix into a muffin tray lined with paper muffin cups. ๐Ÿ˜‹

Bake the cupcakes for approximately 18-22 minutes (until a toothpick or fork comes out clean). Be sure to allow the cupcakes to cool completely before icing.

And now, for the Icing…

Finally, add the ingredients for the icing into the stand mixer. Mix on medium until fluffy (~ 1-2 minutes). Then pile your cupcakes high with this extra bit of sweetness.
