Valentine’s Day was the perfect morning for heart-shaped low carb pancakes with my favorite valentine’s! This is my favorite recipe, the kids love to mix the batter and help Mommy cook, it’s very simple but tastes delicious!

Thick, fluffy, and buttery keto pancakes! Only 2 net carbs per serving. If you miss real pancakes, then you will love these!

Easy keto low-carb pancake recipe

Ingredients

  • 2 cups almond flour
  • 8 tbsp butter, melted
  • 1 tbsp avocado oil (I use MCT 143) 
  • 1/4 cup water
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 2 tbsp sweetener of choice 
  • pinch of salt
  • extra butter for griddle

Instructions

  1. Combine all ingredients in blender or food processor. Let mix until fully combined. Let batter rest 5 minutes before cooking.
  2. Set a griddle (or nonstick skillet) to MED LOW heat. Use a 1/3 cup measuring cup to portion out pancake batter.
  3. Cook until edges are firming up. The pancakes will not bubble up like traditional ones but there will be little bubbles.
  4. Flip and cook 1 additional minute.
  5. Serve hot with a pat of butter and sugar free maple syrup (my favorite- Lakanto Maple Syrup)
